Not all cutting boards are created equal. When I’m choosing one, I avoid glued or laminated boards, plastic surfaces, resins, and surface coatings. I stick to solid materials like wood, stainless steel, or titanium and try to keep food contact as simple and straightforward as possible.

Metal cutting boards can be harder on knife edges than wood, so you may notice you need to hone knives more often. Some people also prefer to use metal boards alongside wood boards, depending on what they’re prepping.
