What I Like
I like that this pan uses straightforward glass with no coatings, no forever-chemical style finishes, and no plastics coming into contact with food. It fits well into a low-tox kitchen because the material choice is clear, simple, and predictable, even for higher-heat baking.
Things to Keep in Mind
Glass can crack if exposed to sudden or extreme temperature changes, so I avoid moving it directly from cold storage into a hot oven or placing a hot pan on a cold or wet surface. Glass also isn’t naturally nonstick, so for cakes or sticky batters, a light coating of oil can help with release.
