Not all cutting boards are created equal. When I’m choosing one, I avoid glued or laminated boards, plastic surfaces, and heavy chemical coatings. I prefer solid wood or stainless steel/titanium because these materials have a long history of direct food contact without unnecessary additives or hidden layers.

Stainless steel is an inert metal that doesn’t require coatings to perform and doesn’t introduce PFAS, nonstick finishes, or plastic resins into your food prep area. In food contact situations, stainless steel is one of the cleanest options available, especially compared with plastics and composite boards.

The KORVOS board features a double-sided stainless steel prep surface. One side is smooth and flat for general chopping, while the other has shallow grooves designed to catch juices from meats and produce. What I Like
I like that this board uses stainless steel for the food-contact surface, a material that doesn’t rely on coatings or finishes that could degrade over time. Because it’s metal, it’s easy to clean thoroughly and doesn’t absorb odors, stains, or bacteria the way some other materials can when they get cut or scratched.
Things to Keep in Mind
Metal cutting boards can be tougher on knife edges than wood or end-grain boards, so you may find knives require more frequent honing. Stainless steel can also be louder and a bit slicker under a knife compared with wood, so a cutting mat or towel underneath can reduce noise and movement during use.
