Not all cutting boards are created equal. When I’m choosing one, I avoid glued or laminated boards, plastic surfaces, and heavy chemical finishes or coatings. I prefer solid wood or stainless steel/titanium because these materials have a long history of direct food contact without unnecessary additives or hidden layers.

This board is made from solid walnut hardwood with an end-grain construction. It is conditioned with a food-safe mineral oil and beeswax blend rather than synthetic varnishes or polyurethane-style coatings.

The John Boos WAL-R03 is a heavyweight walnut cutting board with a reversible end-grain surface. End-grain construction is gentler on knives and helps reduce visible cut marks over time. The food-contact surface is natural hardwood treated with a simple oil and beeswax finish.

What I Like

I like that this board is solid wood with a straightforward, food-safe finish and no plastic layers or surface coatings. The reversible design gives two usable sides, and the end-grain surface works well for frequent chopping and slicing.

Things to Keep in Mind

This board should be hand-washed and dried promptly. Periodic conditioning with a food-safe oil or board cream will help maintain the wood and prevent drying or cracking.
